How it Works

Purchasing Freezer Pork

  Purchasing pastured pork for your freezer is an economical way to keep your family in delicious and healthy meat for an extended period of time. We sell our pigs based on the live weight of the animal at the time of butchering. Selling this way insures that the customer gets an accurate price based on the weight of the meat that comes from the pig.

  Typically the yield of meat will be at or just above 72% of the live weight. So, a pig that weighs 300 pounds live will yield a minimum of 216 pounds of hanging weight pork. Once the carcass is butchered, the yield will change depending on how the customer want thier meat cut. Lots of boneless cuts will in the end yield slightly less weight then cuts done bone in. The customer will work directly with the butchers we use as to how they would like thier pork cut.

  What You Get

  Once you pick your pork up from the butcher, you can typically expect to find Pork Chops, Pork Roasts, Hams(Both butt and shoulder), sausage, side meat(bacon!), ribs, hocks, liver, trotters and if you wish the head of the pig. Once your pig arrives at the butcher, you will speak directly with the butcher by phone, or in person if you wish, to fill out a "cut sheet". The butcher will guide you through your cutting options at this stage of your purchase.

Picking Up Your Pork

  Pigs are dropped off by me at the butcher early in the week, usually on Monday or Tuesday mornings. Your pork will be ready to pick anytime after the Friday of the same week I drop them off at the butcher. You will pay the butcher his fees (seperately from your invoice from the farm for the pig) at the time you pick up your freezer pork. I will send you an invoice for the purchase price for the pig and a small handling/delivery fee the day the pig goes to butcher. NO meat can be picked up at the butcher until the farm receives a payment for the pig.

Purchasing Freezer Beef

  Purchasing freezer beef is done in the same fashion as purchasing freezer pork with a few exceptions. Freezer beef is sold by the hanging weight as opposed to the live weight of the animal. This is simply because it is simpler for the butcher to weigh the animal in this fashion. Hanging weight will vary according to the age of the cow at the time of slaughter. Our beef is Grass-Fed Jersey Beef. Jersey beef has more flavor then most other breeds of beef cattle. Jersey's tend to have lighter carcass weights. Typical hanging carcass weights for Jersey's are around 300 lbs. Actual yield is usually around 225 lbs. but this will vary depending on how the customer has the meat cut by the butcher.

What You Get

  When you pick your beef up from the butcher you will typically get steaks, roasts, ground beef, liver, heart and soup bones. Quantities will very depending on how your beef is cut. Once the beef is dropped at the butcher you will receive an invoice for the cow from Six Oaks Farm and you may at any time after that call the butcher to go over your cut sheet. The butcher will talk you through the various cuts so you will get what you want out of your purchase.

Picking Up Your Beef

 

  Approximately 10 days after your cow is dropped at the butcher you will be able to pick up your beef. You will pay the butcher his fees at time of pick up. Six Oaks Farm will send you an invoice the day your beef is dropped off at the butcher. NO beef will be released to the purchaser until the invoice is paid in full.

Purchasing BBQ and Roaster Pigs
  BBQ and Roaster size pigs are available at Six Oaks Farms seasonally. Usually June through September and November through December. Call the farm directly for availability. Order by using the button below.
 
 
CSA Ordering Information
  Our new CSA will begin in May 2019, We will be offering 2 sizes of bi-weekly vegetable orders. We will also be offering a pastured Pork add-on to our CSA orders.
  Vegetables contained in each of the CSA baskets will vary seasonally. We will be including a variety of no less then 4 vegetables in each basket but it will usually be more in the "high" growing season. All vegetables contained in the CSA baskets will be grown at Six Oaks Farms. We do not re-sell vegetables from other farms thereby assuring you, the customer, fresh, chemical free and healthy vegetables for your table.
  Pork CSA add-ons will be available in two variations and will include  1 or 2 lbs of breakfast sausage and one or two nights pastured pork meals for four people. Quantities will vary by customer order.

Piglets
